Leftover Pancake Dilemma
I know. Leftover pancakes does not really sound like a dilemma--but it is if you're trying feed your children semi-healthy food. I once again found myself in the position of getting through the morning homeschooling and wondering what lovely leftovers we had for lunch. Hmmmm. Pancakes. Somehow that just didn't seem like a hearty, healthy sounding meal. Then a recipe I'd read the other night popped into my head: Grilled Bulls Eye! If you're not familiar with that, it's just cutting a hole in a piece of bread you're frying in butter, and then frying an egg within the hole--so it looks like a bulls eye. I decided to try that with my pancakes. Hey! Grains and protein! To make it somewhat healthier, I added melon as a side. Voila! A semi-healthy breakfast and a way to finish up my leftover pancakes. Oh, and it was a hit with the kids. They all wanted seconds.
