Here's the recipe for those Spicy Gumdrop Cookies I've promised some of you! This was a hit with the kids, and it helped me having them chop the gumdrops. They loved it, saved me a tedious, sticky chore. ;-)
Spicy Gumdrop Cookies
¾ cup packed brown sugar
½ cup granulated sugar
½ cup butter or margarine, softened
½ cup vegetable shortening
1 egg
1 tsp. vanilla
2 cups uncooked quick-cooking oats
½ cup flaked coconut
1 tsp. baking soda
½ tsp. salt
1 cup chopped spiced gumdrops
Directions:
Heat oven to 375 F. Lightly grease cookie sheets. Set aside. In large mixing bowl, combine sugars, butter, shortening, egg and vanilla. Beat at medium speed of electric mixer until light and fluffy. Add flour, oats, coconut, baking soda, baking powder and salt. Beat at low speed until soft dough forms. Stir in gumdrops.
Drop dough by heaping teaspoons 2 inches apart onto prepared cookie sheets. Bake for 7 to 10 minutes, or until edges are golden brown. Let cool for 1 minute before removing from cookie sheets. Cool completely before storing.
