Sorry. Couldn't resist the title. I was in an alliterative mood this afternoon. :-)
Normally, I am not "zealous for zucchini" myself. Having never grown up eating it in any dishes, I was not familiar with any food preparations of it. The past few years, I've had some yummy zucchini breads, so that's what I've mostly stuck with making.
However, this past Sunday, a lovely lady at church left some delectable looking zucchinis in a box from her garden for anyone to take. They seemed to be about twice the size of the ones I've seen in the grocery store, so I grabbed a couple.
I was orginially planning on making banana bread that next day as I had some overripe bananas, but I didn't want to make banana AND zucchini breads. Google came to the rescue once again. I searched for a "banana zucchini bread" and came up with this wonderful recipe. I did tweak it a bit after reading the comments. I added in one extra banana and one extra cup of zucchini. I used only 1/2 a cup of sugar instead of the 1 suggested cup. Then I put in a cup of applesauce instead of the 3/4 cup of oil it required and threw in some raisins instead of the cranberries or walnuts. I think I'd leave out the extra banana next time though. It was really good!
One of the large zucchinis was used in the making up of that bread, but I still had another one. I had leftover stuffing from making my nuggets the other day (which you can read about in my previous post). On that package of stuffing was a recipe for "Beef Vegetable Skillet" which required zucchini. Basically you cook up a pound of ground beef and a medium onion. Cook and drain. Add chopped up zucchini (2 medium ones or 1 large one like I had) and a 14oz. can of stewed tomatoes. Cover and simmer until zucchini is tender. Then add 2 cups of stuffing and 2 tablespoons of Parmesan cheese. Turn off the burner and let it sit for 5-10 min. until the stuffing absorbes up the liquid. Pretty easy recipe and I really liked that one too. The kids weren't fans because they don't like the texture of cooked zucchini. They'll eat it raw though. Weird children!
